This is a recipe that I believe I first got from one of my sisters. It has become one of my most popular when I share treats. Whether it's as a thank you for teachers, or at a bake sale or farmer's market, these always go super fast! And, they are flour-free. That seems to be a pretty good selling point most of the time. One of my kids went gluten-free for a while, so these were often in our treat box. Ooh...also popular with my kids' sports teams as well. I also like to make them on the smaller side when I'm on snack duty at church.
Mama's Monster Cookies (LARGE batch!)
3 eggs
1.5 cups packed brown sugar
1 c white sugar
1 teaspoon vanilla
1 teaspoon honey
2 teaspoon baking soda
0.5 cup butter
1.5 cups peanut butter
4.5 cups oats
1 cup semi-sweet chocolate chips
1 cup candy-coated milk chocolate pieces
Mix ingredients one at a time, in the order listed. Bake at 350 F for 18 to 20 minutes. The middles should look almost not-completely-baked, and the bottoms should be starting to turn golden brown. Let cool on baking sheet for at least 5 minutes before transferring to a cooling rack.
I usually use a large scooper and get somewhere between 20 and 25 cookies; a small/regular scoop or approximately 2-tablespoon-sized balls will make almost double the amount of smaller cookies.
