Blueberry muffins will always have a special place in my heart. 💕
These were a Sunday morning staple in our house growing up. And they were not my mom's thing. These were nearly always made by daddy. Looking back, I'm pretty sure it was a way to let my mom manage to get a quick and uninterrupted shower in. There were four daughters in my house growing up and we'd all often end up in the same bathroom getting our "church hair" done. I'm sure a few minutes by herself was much appreciated by my mama!
We would wake up ourselves or be woken up to my dad standing at the bottom of the staircase and hollering, "Reveille, reveille, reveille; all hands on deck! Uniform of the day is: church clothes!" We would be able to help him stir the mixture up and put it into muffin tins. And, the best part was definitely being allowed to lick the beaters/spoon and scrape the bowl out! We would eat the muffins up from these deep-purple plates that were perfectly sized for a muffin or two. There may have been negotiations about the proper or allowed amount of butter on each muffin. Or whether they were best eaten with a fork or a spoon (when they were too hot to handle with fingers). What fun memories to have when I make or eat blueberry muffins with my own kids. Here's the recipe we used growing up:
Muffins (makes 12)
1.5 cups flour 0.25 cup soft shortening
0.5 cup sugar 1 egg
2 teaspoons baking powder 0.5 cup milk
0.5 teaspoon salt 1.5- 2 cups blueberries, if desired
Mix ingredients together; bake at 400° F for 20-25 minutes. (You can use whatever mix-in you prefer if blueberries don't suit your fancy.)
