Mama's Tortellini Soup


 
This simple soup tastes incredible and is easy to simmer in a crock pot all day or quickly pull together after a full day of work or fun. 

This soup is one of our family's favorites. We try to have a plethora of canned tomatoes and chicken stock on hand, so we're usually just a few ingredients away from making these bowls of deliciousness.
 
When I do shop the ingredients for this meal, there is one ingredient that often trips up the cashier; the fennel bulb. Here is a picture for anyone that doesn't know what fennel looks like. 


It has a very mild anise-y or licorice type of flavor. It's delicious! Don't forget to use the stalks and fronds when you slice it up. I usually save some of the frond to add some extra garnish to the soup in each bowl. There's a recipe image at the bottom of this post, but I actually have two ways I make this meal, depending on our schedule. 

Tortellini Soup Ingredients

When we have a crazy busy night with multiple activities--meaning kids needing to eat at different times, I opt for the slow cooker version. On nights when I know we can all sit down together for our regular family dinner, I go for the stovetop version. 

Slow cooker version
Heat olive oil; brown sausage. Transfer to slow cooker. Add onion, garlic, red pepper flakes, fennel, tomato, and chicken stock. Cook on low for 6 to 8 hours. Add tortellini to slow cooker and cook on high for 30-45 minutes, or until tortellini is cooked to desired tenderness. Stir basil and parsley in just before serving. Everybody grabs a bowl on their own schedule.  

Stovetop version
Warm oil in a big ol' soup pot. Add sausage and cook through. Add onion, garlic, red pepper flakes, and fennel. Cook until onion and fennel are soft. Add tomato and chicken stock; bring up to a boil. Lower heat and add tortellini. Cook to desired tenderness. Stir in basil and parsley. Served garnished with extra fennel frond.
